Grandma always made frittata on Friday for supper, in the day when we couldn’t eat meat. She made Italian tomato salad along with it. Great in the summertime.

Love zucchini frittata! I do grate mine and sauté the zucchini in some finely diced pancetta. Instead of milk, I use a little heavy cream. The rest is pretty much what Laura does. Great served hot or cold. I have used a mixture of Gouda/gruyere cheese from Aldi. Works perfectly! Truly anything Laura makes looks amazing! I don’t always have parmegiano reggiano on hand.

@karrybear of course!!! and also normal potatoes... you have to dice them and cook with olive oil. when they are ready take off the excess oil and add the eggs.

I've been chicken to plunk beaten eggs into the pan with already sauteed zucchini, instead of premixing the eggs with the cooked zucchini in a bowl and then putting it all in a pan. Thanks for showing me the key to the easier way: putting plenty of oil in with the zucchini at the beginning of the saute so there is enough around when the eggs arrive!

laura, where do you get your parmigiano reggiano cheese from in that huge block? i always get the pre-grated for budget-friendly reasons but would you recommend using fresh parmigiano reggiano over store-bought pre-grated or are they the same? thank you!

Hi Laura, I want to ask what kind or brand of pans are you using ? I heard something about GreenPan with this "new" ceramic surface, which guarantee you super non-stick and easy cooking even without oil and it´ts PTFE, PFOA free...what you say about this pan ? Or what so you preffer or what you expect from pan... I am asking b´cause now I am into cooking :).
