Use 100g of flour and mix it with 50g of water to make a dough, cover the dough with flour from bottom and top and cover it with plastic wrap, leave it to ferment for 12 to 36 hours depending on the temperature of the room. Once it’s fermented add more flour and rub it with your hands as illustrated in the video. Hope you find this helpful.

In the video it looks like only 1 tbsp. of molasses was used but she wrote to use 2tbsp.. I used 2 tbsp. in my starter & the mix was a darker color. Also, how much cornstarch was used? Thank you for the video.

It is 2 tablespoons of molasses, and for the cornstarch you can use as much as it takes to get the texture illustrated in the video.

Store in room temperature not in the fridge, it should keep for up to 3 months. Yeast doesn’t normally die in room temperature but you can get a mold infection if the storage was exposed to humidity.

I prefer to crush the grapes before fermentation. When ready- pour off the Juice, squeeze more from the Must, and optionally, add some of the Must into the recipe to make "Raisin Bread" !

I'm not good with my words but, I tried to make my own yeast by using dates, before doing this though, I researched to make sure that I could do this, because I have stomach issues and certain things bother me, I got my information from Bing the AI, I have done this twice and it has failed, I feel if you want to make Date wine that's what it's good for 😔

Maybe you want to give it a try following my way, you can even use other fruits like grapes if the dates are not working for some reason. If it doesn’t work with you for any reason you can bake with sourdough starter, it doesn’t have the same effect on the stomach like normal bread .

Thank for your comment, the rule of thumb in using yeast water is the following ( 100g of yeast water = 1/4 teaspoon instant yeast +100g water). If your recipe calls for 1 teaspoon instant yeast then you will use 400g of yeast water, bearing in mind the hydration percentage of the dough in the original recipe. Using yeast water in baking requires longer time than instant yeast because of its slow fermentation process, so keep in mind that it is not for quick bread making and you will need to plan ahead the time you want your bread ready. Yes you can use any type of wheat flour. I recommend using double the amount of instant yeast in the recipe when using natural dry yeast.
