Yes it takes practice to make one that doesn’t break. You can use noodle machine or cut with knife too. Otherwise, you can also do the usual style which is 80-20% buckwheat and all purpose flour.

Hi, no. Please use a rice koji starter. Tempeh starter is for making tempehs. :)
