You can do nori (seaweed) flakes, natto, Lightroot paste (nagaimo/ huai shan) or just plain sea salt.

I've made noodles and pasta many times before, but never made homemade soba noodles. It takes lots of skill but I'll think about it. But you did good.

When I’m trying to make it doesn’t hold n breaks as no gluten …what should I do ?? Can we use noodle machine

Yes it takes practice to make one that doesn’t break. You can use noodle machine or cut with knife too. Otherwise, you can also do the usual style which is 80-20% buckwheat and all purpose flour.
