That was easy. Now to look for the ingredients. We used to get fresh shitakis for a time in our market, it went really well with one of our traditional dishes. I hope I come across it again. Do you think a portobello would work? I know it's different but... The kombo is another issue. Strange how the hardest parts is sourcing the ingredients.

You can also use dried shiitake mushroom instead of fresh shiitake mushroom. Is there any Chinese or Korean or Japanese supermarket there?

@@kurumicooksJapanesehomecooking tried it before, wasn't good. I don't think we get the best quality. I'm not aware of such stores, usually there is a section in bigger stores. But there is one place I should check out, will do soon hopefully they have something, since they're on the expensive side.

Hi ,thanks for your question. It depends on the season - in spring, it’s best to keep the tray inside by a window - in summer , outside in a sunny spot is fine but keep an eye out for pests when the seeds begin to sprout.

You’d be better off taking your time and starting it at med-high heat (with a bit more oil)then dropping to medium if need be. I hate dark brown(burnt, to me) eggs. Still a very intriguing method….very Japanese! 😊
