I struggle to perform this differently to O-Guruma. What are the small differences?

The issue a lot of people have is that their kuzushi is poor and then their outstretched leg ends up sliding higher up tori's body and into the O-guruma position and the throw fails. Focus on generating good kuzushi and keeping the leg low.

Seoi techniques involve carrying uke on the back, which is done here. Tai-otoshi has only hand contact, this is quite a different throw to a Tai-otoshi.

Love this, Kashiwazaki style. Would do the same hop into a (?) yoko gake or tani otoshi looking thing.

Tani-otoshi wouldn't work because you're too front on - there is no way to hop like this and end up behind uke for the angle you need. A Yoko-otoshi could work.

"Looking at the watch" is a Coaching cue that is used to place emphasis on the sleeve hand pull for certain throws. Because of the need to create space between the sleeve hand and hip of tori, the action isn't quite the same.

To duck under an establish controlling grip would be, but to parry the arm if the opponent looks to take a georgian grip is fine.

No sadly, the leg entanglement or grapevine is illegal in judo now because of leg injuries and etc

Look into uchi mata - Sumi gaeshi combination, it's similar but without the grapevine

Grapevining is not illegal in Judo as long as you don't throw backwards in the manner of Kawazu-gake. This technique is borderline in, and I wouldn't risk doing it in competition, but the action is much more Sumi-gaeshi than Kawazu-gake, but the throw does go backwards. You are perfectly within the rules throwing Uchi-mata, or Osoto-gari with a grapevine on the leg.
