Hey, do you use 2 pods to make a double espresso? And if so, then maybe it's the brand. You can also use a frother instead of a shaker which may work better.

@@TheHungryBites To be honest I only use 1 pod and press the short espresso twice. |The funny thing is that sometimes the foam is very good and sometimes is non-existent..

@@ristoarnaudov8481 maybe that's the problem :) espresso freddo is always made with two pods, because otherwise the taste is very weak.

I always swap the fats in other recipes to olive oil😂 and tahini gives cookies chewy consistency, great❤but i use spelt or whole wheat flour or oat flour

Hi Patricia, unfortunately I don't have any recipes with sugar alternatives at the moment. However, I have used an erythritol-stevia blend for this Vasilopita recipe and it worked well. You may also want to replace some of the flour with whole wheat flour to further reduce the glycemic index. Wish you a happy 2024!

Fredo espresso is not usually garnished, but you can add a sprinkle of cinnamon or powdered chocolate. You can also add some whipped cream or ice cream 🍦
