I'm so frustrated! I've been mixing my batter for several minutes to no avail. I turned to the internet which provided me your video which showed me that I was not pressing the sides of the bowl to get the air out. I started doing that and have continued to mix it has been over 10 minutes and I still do not have ribbons. I carefully measured all my ingredients, I made sure my meringue was at the stiff peak stage and it did not break (which was an error I have made in the past). I'm so frustrated! It just still seems too thick and clumpy (ooh, I did make sure to sift all my ingredients as well). What is happening here? Did I over mix without realizing it

I really appreciate the "real time" tutorial. I overmixed a meringue once, answering the doorbell, when I was making shells to serve ice cream in for a dinner party and didn't have enough eggs to start over. It scarred me for several years ;) so I tend to under-whip. Your video reassured me that I DO have more than a few seconds between "not there" and "too much".

My process is great. And I air dried the macaroons close to an hour. But when I cook them they melt into each other causing them to be only a shell. What am I doing wrong 🤷‍♀️

You changed 3 variables in the leftover experiment: The resting time, the baking temp, and the baking time. Since macaronaging with a spatula bites, I'd rather see what happens if you use the mixer but change to the flat beater and/or don't overbeat it. I think I'll try that next batch.

Interesting. Why don't you remove bowl from the machine to scrap, it works it won't be so awkward, just a suggestion 😊

Hi, is any different temperature of regular oven compared to conviction’s oven when baking macaroons also the length of the baking too. Thanks a million for teaching. Love you always.

I think my oven is too hot. They are coming out a little brown on the bottom and with some hollowness and possibly underbaked middles. I am working at 300 (per oven thermometer in the middle of the oven) for 14 minutes. I don't know if I should drop it to 290 or 275 and do 16 minutes. Any recommendations?

Can I ask I have a big oven in my home brand name call German, should I open the fan or off the fan when I bake the macaron?

I've baked my macs at 310 for about 13 mins and it started browning. 😢 but my pans were also the darker pans so that might be why it got brown. I used a thermometer to gauge my temp both middle and one level above the middle rack were both 300., but when I bake it in the middle rack it seem to be too hot.

The oven thermometer is a MUST! Don’t even bother if you don’t have one. My oven is 30 degrees off!

I have a conventional electric oven that the temperature doesn't stabilise where it should be. I have two oven thermometers and I see the reading goes up to 350 F even though I set my oven temperature to 300F. It's a fairly new oven (about 3 yrs old). Any tips on how to stabilise the temperature and stays on 300F?

Hello! I have recently started my macaron journey! I have tried both the French and Swiss way of making the meringue. My French method dried nicely, however, my Swiss method wouldn't dry. I attempted it twice and had the same problem. I am not sure what happened. I do live on the Pacific Coast, only a couple miles from the ocean. Also, how much Cream of TarTar do you use?

Fab video as always. Ive tried to make these over many years but always get the same result no matter what i do. My shells rest and are touch dry after 10 mins and are baked at 300f 18 min. They just dont cook.. when you pick them up there are no bottoms or middles just hollow stickiness. Id appreciate any tips.

Hi, I saw your detailed video v well explained. I would just like to know which oven shelf do you bake in, I first time put in the bottom shelf for 150°c it got its feet but were not baked completely.

Sometimes the feet evaporates in one side, what can be happening? you can see a beautiful feet but is like cristalized and broken..as well what can be the cause of a hollow macaron? Thank you

Yes, it just helps stabilize the meringue. It’s definitely optional. Another ingredient that also works is a pinch of cream of tartar
