Greetings to you from the UK. We've (my husband and I)' been watching a lot of your videos. My husband has just lost his mum of 84 after a relatively short illness. He says that your son is very lucky to have these recipes documented for all to see and learn from. Many British born young Jamaicans have not learnt to cook these dishes and will be lost thru' the annals of time. Your son has provided a valuable pieece of history even though you are in the USA.

No coconut milk for me. People who come from the rural parts of Jamaica, cook with the coconut milk. Most people from Kingston don’t use the coconut milk.

Auntie Pauline: Why do you call it callaloo? I'm from Trinidad and we call it Spinach or Barggie. Callaloo is Trinidad national dish. We say Crab and Callaloo.

Jamaican is Jamaican no matter what color..one love! as a Jamaican who left at an early age, I really regret that I had lost most of my Jamaicaness. I had to get back it recently when my mom got up into here 90's and, as her hearing went, she could only understand the old Jamaican patwa. I had to relearn how to speak it, which I did. I found out that it never it never really left me, it was just buried somewhere inside of me. My mom passed away last year but me and my mother got even closer in her last year, because we could communicate and laugh and talk and joke with each other 100% Jamaican style, something I thought was no longer possible. I could see we didn't have a lot of time left, and I didn't want her to feel alone or isolated. I wanted her to know how much I loved and appreciated her for showing me the meaning of unconditional love. For Jamaicans, family is everything, especially the older members of our family. we constantly strive to direct as much love and respect towards them, and we do it without even thinking about it. It is who we are. It is is exactly what I see going on in your family right now, and it warms my heart. The connection is instant. We are Jamaican people, abroad or not, Canada, America, England, doesn't matter. Our connection is instant, and our main strength is each other.

The twins them bad in the kitchen. I’ve never tried coconut dumplings before, but because they made it look so easy, I will. However, I’m going to add the yellow yam and banana to the dumplings to make the dumplings complete. Going to follow the fried chicken recipe also. Wish me luck, and thanks Aunty P for teaching the men the culture of cooking, washing, and cleaning. 🇯🇲🇺🇸
