I've been watching subtitled anime for almost 20 years (god where has the time gone) and aizuchi is probably the only thing I picked up on aside from a few dozen basic vocab words.

I saw an anime where a character jokingly called themselves (name)-sama and their friends got mad at them. I understood it as them pretending to be royalty and acting really arrogant. Is that correct? Have you ever seen someone do that IRL?

Would it be strange to use いえ、結構です in any of these cases when refusing? Also oftentimes I would thank the cashier back when they handed me the bag, just after they were thanking me, was that a strange thing to do?

This reminds me of arguments I've had with other English speakers who think singular "they" is ungrammatical. Often, they use it themselves accidentally in the conversation. BTW, while people specifically requesting to be called by they/them pronouns for gender identity reasons is fairly new, it's long been a part of English to refer to an unknown person by those pronouns. "Someone lost their phone." "Someone cut me off while driving, so I honked my horn at them."

Halfway inclined to pull the gaijin social rules card and preempt all the questions by just leading with "ah, you don't need to do anything, I'll just pay, thanks" in Japanese. Convenience stores in the US work fine with damn near zero speaking at all aside from the dollar total, and if I want your help, I'll ask for it. The whole song and dance is completely unnecessary.

That is why one of the best ways to learn kanji is by reading things with furigana and with a translation option to confirm it is what you think it is, besides that just watching translated japanese shows

I would love a similar video about restaurants. I can think of many times I've embarrassed myself at Japanese McDonald's or in front of waiters etc and it kinda makes me feel hesitant to go into unfamiliar restaurants

Yeah, absolutely. Just get to about N3 level and just read manga (shounen and shoujo specifically because they have furigana), not only is it fun but it's a good study method to learn vocab and the kanji follows from there
