To use gelatin powder, multiply the weight of the gelatin sheets in my video by 1.5. Soak them in 3 times of the amount of gelatin powder in cold water before heating.

Yesterday, I made this mousse cake for my grandmother's birthday, and she liked it because it wasn’t too sweet and tasted refreshing. Just a tip for anyone who wants to try making it: mix the cream cheese and whipped cream separately. I combined them, and it didn’t rise, probably because of the tropical temperature 😅 1. Mix the cream cheese until it’s soft and creamy. 2. Whip the heavy cream until it reaches soft peaks. 3. Gradually fold the heavy cream into the cream cheese while stirring.

Hi, I made this bread according to the instructions. The taste was great, but it was a bit too hard and dry although it was baked for 20 minutes. Do you know what could be the reason? Should I perhaps add the water on the bottom of the oven as when baking baguette? And how thick is the dough when you flatten it? Thank you!

Pour éviter que le gâteau retombe, il faut faire attention à trois points : 1. Utilisez un moule en aluminium ou en silicone. 2. Une fois la cuisson terminée, secouez immédiatement le moule et retournez-le. 3. Démoulez le gâteau uniquement lorsqu’il est complètement refroidi. Ça fait 1,5 heures à peu près.

I’ve always done mine in the way you mentioned above. To answer your question, the difference is in the egg whites. In this video, the egg whites is in stiff peak stage then fold with all other ingredients instead of soft to medium peak for the other method. I don’t think this video would safe for beginners!
