This a good video I was looking for. I just got a machine and just starting to learn how to do this. Thanks

Hi Orian, (Great name by the way). Is that grinder behind you the one you use to make espresso? As it is the same one I use, but I was thinking of upgrading, as the great know-everything about coffee James Hoffmann (which of course he does 😄😄) says it is not up to the job.
@OrionBurford15 сағат бұрын
@@Brewermb Hey 👋 if you are talking about the wilfa svart grinder, I dont use that one for espresso as it is not espresso capable as james Hoffman says, it is purely for filter coffee. The finest you can go is enough for a Moka pot so you could make espresso with it just not in an espresso machine. If you are using it for espresso I would definitely upgrade.

Thanks for the video! What about the tamping force? How hard or soft should I push? Does it matter even? (I guess it does)
@OrionBurford2 ай бұрын
Thank you for the comment. Short answer is it depends, Yes It does matter and it does affect your espresso, in general you are supposed to tamp with 30 lbs of pressure and you can find out what 30 lbs feels like by tamping on a set of bathroom scales. I think you should tamp with 30 lbs of pressure, however I recall hearing about some scientific study that suggested 8 lbs to be the most optimal tamping pressure which kind of suggests that tamping pressure is about Preference and what you find you can execute the most consistently, although like I said I would stick to 30 lbs especially as a beginner because its standard knowledge. Hope this helps! 👍

From what I've seen sour coffee usually means underextractiom. So my thinking in 16 vs 18 grams is the same amount of water, contact time, and pressure at 18 grams just isn't extracting everything but you have 2 grams less to extract with the same water, etc

Thanks for the video, what beans / pre ground do you recommend for beginners espresso? I have a delonghi dedica but I don’t have a grinder yet.
@OrionBurford2 ай бұрын
I would highly suggest that you avoid pre-ground coffee and buy a cheap espresso grinder like a baratza sette 270. Ground coffee goes stale and rancid very quickly, my advice for buying coffee would be to look for local specialty coffee roasters near you, you can do this by going onto google maps and just searching "Specialty coffee roastery", browse some of the coffee they have to offer and pick out the ones you like the sound of, just make sure the coffee is a medium roast as dark roasts go rancid very quickly and light roasts are not beginner friendly. I hope this helps 👍

Would you know why italians tamp lightly? Awesome video. Thank you.
@OrionBurford2 ай бұрын
Thank you for your question! I think it probably has something to do with speed and efficiency. Italian cafe's traditionally are known for having a very fast paced bar flow because espresso was meant to be almost instantaneous to make, so by reducing the action of precisely tamping down to a fast tamp or not even tamping at all they are able to speed up. Hope this helps.

hey mate great vid and review ! what would be the alternative for induction gas range ? Would it be very different by roasting in a pot using the same method (constantly shaking) ?
@OrionBurford5 ай бұрын
Im glad you enjoyed the video! To answer your question, I am not aware of any roasters for induction hobs, you could use a pot and a spoon to stir it around but it would be difficult to get as consistent results as the beans are almost always in direct contact with the pot which could affect consistency throughout the roast. Alternatively, you could roast using a heat gun like this guy did > kzbin.info/www/bejne/a3u5dIuCgriZhMU However I don't know how safe it is 😅 If you do though let me know how it goes!

"bottom of the spout" is so senseless when every picher has different design and spout size . can we get like a percentage instead ? like 30 or 40 % full ? as a chef we say to allways make things easy to repeat on any equipment when writing recipes .

Partially true. Dialling into a recipe only gives a ball park result... taste it, just cos the dose, yield and extraction time is technically what the roasters have said produce good results... depending on the freshness, the accuracy of roast, the seasonal variation of the beans, the equipment youre using, even pedantic things such as the heat and humidity of the room... if you've never been a barista responsible for dialling in coffee... a good barista rarely sticks to a recipe and will often adjust the yield by ±1-5mls, the dose by ±0.5-2g, and the extraction window of ±2-8 seconds. Use a dialling in chart to identify the prominent error in the shot you've extracted, and solve it using the solution the chart provides to create a more balanced shot. Also, taste your espresso in 3 ways, a pure espresso... a diluted espresso... and an espresso with the addition of milk. Some beans are better suited to black or white, some are decent with both... just test test test and realise that tomorrow you may need to adjust it again... day 1 perfect settings will differ from day 14.
@OrionBurford11 ай бұрын
Thank you for the advice! I did try all shots off camera, and I never follow a single recipe when dialing in at work, the only reason I follow one recipe on this machine is because it always has a slight sour tinge no matter the coffee, no matter the cleanliness of the machine and no matter the quality of the water, I don't know if it's a thing with home espresso machines but it's always been the case on all machines I've owned.
