I like the owner. He seems like a good man. It pains me to know his wife has passed. The shop also has the feel of older popular BBQ here in Houston, Texas. The old feel of the exterior building is a good thing and complement. The preparation of udon is fascinating and has inspired me to research and attempt it from scratch.

屋台だけではないが生半可な気持ちでやってはいけないな。好きだからこそ大変でもやって退ける。やっただけ自分に返ってくる。気持ちいいね。もう東京やら神奈川で屋台を引っ張って居る姿は拝めない羨ましい。

Wow... Fukuoka does it again... local spot... most tourists stop their travels at Hiroshima... for obvious reasons... understandable on a limited tour itinerary given the history of the location... if time and budget permits... step across the divide... both Fukuoka and the area further down country have always been a pleasure to explore... in the videos presented you are only see the eating delights which are five-star... much like the people... elsewhere there is a bit more ;-)

Enjoyed this insight a great deal... preparation & menu on offer look fantastic... attention to detail and explanation of the adjustments for taste (red sake... one example) very pleasing to read/see... has that must visit unique flair... is there a google map link to the location..? Man...thats so much of hard work of packing and unpacking every thing each and everyday....not sure how much he makes profit out of this business....but the amount of hardwork he puts in is incredible....😮

東京で食鳥処理の資格を持ち焼き鳥屋をやっている者です。 まず、包丁が切れなそーですね。 貴店で扱われているのは、丸鶏でなくて、中抜きかと。 鶏肉の過度なエイジングは論文にもあるように、牛肉と同じような考えはやめたほうがよろしいかと思います。 鳥を捌くのは、骨を断つのでなく骨から剥がしてあげてください。 鶏肉を串に刺すのでなく、串に打つんです。 縫うような刺し方でなく、打つんです。 そこら辺をお間違えなく。 鉄砲串一遍でなく、素材や打つ種類等によって使い分けたほうがよろしいかと。 まだまだお伝えしたい事が多々あります。 ぜひ東京に来て、一緒にやりませんか。
