Eggplant is not my favorite thing. Seems poisonous. But ground piglet is fine. Back in the Pangea times we used to BE pigs ourselves. Try not to think about all this during dinner.

Pot stickers are the best tasting dumplings. You can fumble the assembly pretty awful and they just taste great anyway. I use ground pork cause it tastes so tasty. Sprinkle a Tablespoon of Chinese cooking wine on the pork and mix it in to remove any gaminess that could exist. Otherwise it only adds a subtle flavoring note to the batch.

Do you think you could add chopped lemongrass to this and it would work? I like the flavour of lemongrass in the Vietnamese chili oils, but I'm not sure if it would work without cooking it in the pan. I think it should if the oil is hot enough though.
