Vegan Yu Xiang Rou Si (shredded pork) - My first Sichuan dish to make at home in Chengdu!

Savory, vinegary, and fragrant - is how I described this dish! Yu Xiang translates to fish fragrant while rou si means shredded pork is one of the popular and common dishes here in Chengdu. I veganized it using king oyster mushrooms. Other options to replace mushrooms include tofu strips, soy protein strips, or vegan meat. Hope you like this dish!

Ingredients
1½ pounds king oyster mushrooms
2 teaspoons minced ginger about ½ inch piece
1½ tablespoons minced garlic about 6 cloves
2 pickled chili sour
½ cup fresh wood ear mushrooms sliced
½ cup fresh bamboo shoot sliced
3 stalks of green onions, roughly chopped into 1-inch stick
2-3 tablespoons of cooking oil used olive oil
Yu Xiang Sauce
1 ½ tablespoons light soy sauce, plus more if needed
1 tablespoon Chinese black vinegar, used Chin Kiang
1 tablespoon cooking wine
½ teaspoon dark soy sauce, (optional) for color
1 tablespoon sugar
1 teaspoon mushrooms seasoning, used granules
3 teaspoons cornstarch
½ cup water

I was so worried you wouldn’t post again 😭 this recipe looks absolutely delicious & super easy to execute. I like the practicality of using a spatula with the wok, I hadn’t thought of this technique. If only I could source king trumpet mushrooms locally! I just made a trip to vegas & ate at a vegan sushi spot called daikon. They have a roll called the bulgogi roll made with king trumpet mushrooms & it was TO DIE FOR. Look it up you may feel inspired!! 🌱 love your videos please never stop [:

Happy New Year to you too. Wishing you nothing but the best. Yes, I'm here with my family in Chengdu as my hubby has an expat assignment for a few years. I like it so far especially no green health code is needed to go anywhere. :) It's more flexible. I hope to explore more.

Looks tasty! Are the pickled chilies in a vinegar based or salt based brine? Western-style pickled chilies are nearly always in vinegar brine and although there are a few Chinese markets around me, I don't think I've ever seen whole pickled chilies like the ones you've used. Would something like Lao Gan Ma chili paste work (the kind without oil)?

Thank you for the recipe! It taste much better than eating the pork! all the flavor of yu-xiang is there but no unpleasant meat taste! I found it this afternoon and I have all the ingredients, so I tried, It came out delicious!!! Thank you again!

Excellent recipe. Made it for lunch and was delighted. I did some substitutions: trumpet mushrooms instead of king oysters, because that's what I had. One TB of white vinegar instead of pickled chilis because, sadly, I can no longer handle such heat. Used balsamic vinegar instead of Chinese black vinegar because we didn't have the latter. All worked great.

I did not fry the trumpet mushroom, because I am trying to avoid the Omg6 oil. Instead, I mixed little the sauce with mushroom and steamed mushroom first and then mixed with the other ingredients.

Hi Dear, spectacular looking recipe, humble request if possible can we vegans stop giving old and non veg names to our vegan dishes, this clearly shows that some where at back our mind we're still missing nonvegetarian food, too be real vegan let's stop the practice be real too ourselves. 🙏👌❣️
