The fact is that New York was a really rough place in his youth, you needed to fit in, and things were more racially divided. He played in a band that had the aesthetic, but didnt follow any ideology. He got a bunch of shit for nothing.

Very expensive and consumes a lot of current compared to competitors.The quality of the meat is the same as competitors at half the price.

You guys are amazing butchers, but recommend you re-record the grilling part and next time salt the steak before cooking (you can sell your seasoning in another video) and don't cover with foil while resting (steaming it essentially) - unsalted and overcooked meat are cardinal sins for meat that good...

Q: Can you please inform me how to set the temperature in my DX1000 DRY AGER? It stays on 88.88, I've tried several times, but after a few minutes, the temperature goes back to 88.88. The humidity works perfectly

I just bought one from dry-ager and it cost me just under 10 grand. There are alternatives but dry-ager is probably the top of the line equipment. It's amazing to see he has a whole wall of those things lol.

I’ve seen sushi chefs wrap they’re belly or back in a micro fiber sports towel and leave it overnight in a fridge. You’ll get a similar result in theory but not as refined In theory you’re trying to remove moister so when you cook the fat renders and the mallard effect happens much sooner

Q: is there a difference between buying meat that hangs in a butchers shop for 60days after kill date (quartered pcs) vrs buying meat that's aged in a smaller dry aged locker that's been cut in smaller sections?

The main difference between buying a meat that just hangs in a regular cold room and a dry aged piece of meat is the fact that in a DRY AGER cabinet you can control the humidity and you have a sterilization system. So therefore you have a lot more control over the end product and you have way less weight loss. And an even more intense flavour the just hanging it in a regular cold room.

That’s great! Is the fish completely plain when dry aged? Any salt? Anything? 33f/62% humidity and it won’t go bad?
