If I want to increase the amount of rice, do I just add water at the same ratio of rice? For example, 5 cups rice = 5 cups water/liquid?

This is good. My grandmother use to do something like this when I was a kid which make me wonder if this is a tradition passed down to African-Americans from hundreds of years. What we do differently is to season the lamb/mutton over night & before we brown in the pot. When I was in Guinea Equatorial, I use to run to corner store and get the peanut puree and make this for my guardas that live on the property that I rented. I could go to the Malians and get slaughter goat every other Friday ,and would make a Goat Mafe like stew. It's truly one of my favorite dishes and I hate to say, I could a good plate or two of it also.

Would be lovely if you added a list of amounts of ingrdients to your recipe. Looks lovely, but can't make it not knowing how much of each ingredient to add.

She listed the amounts of the spices, onions and lamb. You can see how many green peppers, red and yellow & the amount of green onions are there.
