I like the ender depot idea. I would add some limitations. To make it less op. 1. Only works when in the same dimension. It could be set up in any dimension. This would help avoid issues with game loading too many things and causing lag 2. While giving items could be done at an unlimited range, the pulling item should be limited in range. That way you can easily unload your inventory when you go near it but it won’t make your inventory “infinite” when gathering/mining.

One other consideration - what is the average lectern placement before getting mending. In the first example were you lucky or unlucky?

Those sea pickle light sources/lanterns/streelights are some of the most genius things ive seen on HC, and i've seen a bit of HC. This is such a cool idea, and easy to do, even for someone who doesnt "get" redstone! (I suppose its barely redstone, but all the same). Very very cool :)
