Its easy. Stone stance and perfect parry for the first 3 hits. For the last two change to the water stance, get close to her and hold the heavy attack button down, once charged spam heavy attacks 2/3 times and you will always get a hit on her. I beat her first try simply by doing this!

I've fought her about 40 times. I've gotten really good at dodging, but I can't lay a finger on her she dodges or is usually super fast. Even when I spin, my blades go through her body. I've kicked her in the face, and it doesn't register the kick to the face. Edited: I figured it out. Wind stance. Just keep jump to the left and kick or heavy swing, repeat a bunch times until you win.
