Make perfect dosas every time with @rocacookware cast iron dosa tawa , which is naturally non stick, easy to clean and adds health benefits to food ✨ INGREDIENTS 1 cup Rice 1/4 cup Urad dal 1/8 tsp Fenugreek seeds Water for soaking Salt PROCESS *Wash rice 3-4 times and soak for 6 hours. *Wash urad dal 3-4 times and soak for 6 hours. *Soak Fenugreek seeds separately. *Drain all the water and add the soaked ingredients in a wet grinder jar. *Add ⅔ to ¾ cup water and grind till you get a fine grainy consistency of rice in the batter. *Now take the batter in a large bowl or pan. Add ½ tsp rock salt. Mix very well. Cover and allow to ferment for 8 to 9 hours or more. *A proper fermentation will double or triple up the volume of the batter and you will see tiny air pockets in the batter with a light sour aroma. *Now lightly stir the batter, before you begin to make dosa. *Heat the @rocacookware cast iron pan. When the pan becomes hot, spread ¼ to ½ teaspoon oil all over the pan. Do keep the heat on low to low-medium heat, so that you are easily able to spread the batter. *When you see the batter on the top has cooked well and the bottom has become crisp and golden, then sprinkle ¼ to ½ teaspoon oil on the edges and center. With the spoon spread the oil on the dosa. *Cook till the base is nicely golden and crisp. The base will leave the pan and the sides will also get separated when it gets cooked. *Fold and serve hot dosa. *Make all dosai this way. *Serve these crisp plain dosa with sambar or potato masala or coconut chutney. INGREDIENTS 1 & 1/4 cup Macaroni Pasta 2 ltr Water for boiling the pasta Salt as per taste 2 tbsp Oil 6-8 Garlic cloves finely chopped 1/2 inch Ginger finely chopped 1 Onion chopped 1/4 cup Capsicum chopped 1 Tomato Paste 1/4 cup Tomato ketchup 1 tsp Red chilli powder 1/4 tsp Turmeric powder 1/2 tsp Garam masala 1/2 tsp Cumin powder 1/2 tsp Coriander powder 1/4 cup Coriander leaves finely chopped PROCESS *Start by boiling the water with a generous pinch of salt, once it comes to a boil add macaroni pasta and let it cook until it is easy to cut. *Strain the Macaroni and keep it aside. *Heat oil in a pan , saute garlic, ginger for a few seconds, then add onion, capsicum, tomato paste, tomato ketchup and cook on a high heat for 2 minutes. *Add Red chilli powder,Turmeric powder, Garam masala, Cumin powder, Coriander powder, salt as per taste and cook for another two minutes. *Add boiled pasta to this mix well, if needed add pasta water for even coating the sauce. *Finally garnish with fresh coriander and enjoy. INGREDIENTS 6-8 kokum (mangosteen dried) 1 ltr Hot water 1 tbsp Sugar or jaggery Salt as per taste 1/2 tbsp Ghee 1/4 tsp Asafoetida 1/4 tsp Cumin seeds 1/4 tsp Mustard seeds 8-10 Curry leaves 2 Green chillies chopped 1/4 cup Coriander leaves finely chopped PROCESS *Soak the kokum in hot water for 20-30 minutes. *Strain the liquid, then add sugar or jaggery, salt , green chilli, salt and mix it . *For tempering, heat ghee , add asafoetida, mustard seeds, Cumin seeds, curry leaves and add this tempering to the kokum water. *Add fresh coriander and serve it . सामग्री 6-8 कोकम (सूखा हुआ मैंगोस्टीन) 1 लीटर गरम पानी 1 बड़ा चम्मच चीनी या गुड़ नमक स्वादानुसार 1/2 बड़ा चम्मच घी 1/4 छोटी चम्मच हींग 1/4 छोटा चम्मच जीरा 1/4 छोटा चम्मच सरसों के बीज 8-10 करी पत्ते 2 हरी मिर्च कटी हुई 1/4 कप हरा धनिया बारीक कटा हुआ प्रक्रिया *कोकम को गर्म पानी में 20-30 मिनट के लिए भिगो दें. * तरल को छान लें, फिर इसमें चीनी या गुड़, नमक, हरी मिर्च, नमक डालकर मिला लें. *तड़का लगाने के लिए, घी गर्म करें, उसमें हींग, राई, जीरा, करी पत्ता डालें और इस तड़के को कोकम के पानी में डालें। *ताज़ा हरा धनिया डालकर परोसें।

Ingredients: For Muthiya:- 3&1/5 cup Methi leaves 1\2 cup Coriander leaves 1/2 cup wheat flour 1/2 cup Bajra Flour 1\4 cup Chickpea flour Salt as per taste 1/2 tsp Baking soda 1 tbsp Oil 1/4 cup Curd 1 tbsp jaggery\sugar 1/2 tsp Garam masala 1 tsp Cumin powder 1 tsp Coriander powder 1/2 tsp Turmeric powder 1/2 lemon juice 1 tsp fennel seeds 1 tsp carom seeds 1 tbsp sesame seeds 1-2 tbsp ginger chilli garlic paste For Tempering:- 2 tbsp Oil 1/2 tsp Asafoetida 6-8 curry leaves 1 tsp Mustard seeds Green chilli chopped 1 tbsp Sesame seeds Fresh coriander leaves PROCESS For Muthiya:- *In a bowl mix together chopped methi leaves, coriander leaves, salt, baking soda, oil, curd, jaggery or sugar, Garam masala, Cumin powder, Coriander powder, Turmeric powder, lemon juice, carom seeds, fennel seeds, sesame seeds , ginger chilli garlic paste and mix everything well. *Add Wheat Flour, bajra Flour, Chickpea flour and make a tight dough. *Take small portions and press them using your palm to make muthiya. *Apply some oil in the steamer and steam the muthiya for a good 15 minutes. *Let them cool down, then cut into small pieces. For Tempering:- *Heat oil , add Asafoetida, mustard seeds , curry leaves , chopped green chilli, muthiya pieces and mix well. *Finally add sesame seeds and fresh coriander leaves. *Serve with green chutney. सामग्री: मुथिया के लिए:- 3&1/5 कप मेथी के पत्ते 1\2 कप हरा धनिया 1/2 कप गेहूं का आटा 1/2 कप बाजरे का आटा 1\4 कप चने का आटा नमक स्वादानुसार 1/2 छोटा चम्मच बेकिंग सोडा 1 बड़ा चम्मच तेल 1/4 कप दही 1 बड़ा चम्मच गुड़/चीनी 1/2 छोटा चम्मच गरम मसाला 1 चम्मच जीरा पाउडर 1 चम्मच धनिया पाउडर 1/2 छोटा चम्मच हल्दी पाउडर 1/2 नींबू का रस 1 चम्मच सौंफ के बीज 1 चम्मच अजवायन 1 बड़ा चम्मच तिल 1-2 बड़े चम्मच अदरक मिर्च लहसुन का पेस्ट तड़का लगाने के लिए:- 2 बड़े चम्मच तेल 1/2 छोटा चम्मच हींग 6-8 करी पत्ते 1 चम्मच सरसों के बीज हरी मिर्च कटी हुई 1 बड़ा चम्मच तिल के बीज ताज़ा हरा धनिया प्रक्रिया मुथिया के लिए:- *एक कटोरे में कटी हुई मेथी की पत्तियां, हरा धनिया, नमक, बेकिंग सोडा, तेल, दही, गुड़ या चीनी, गरम मसाला, जीरा पाउडर, धनिया पाउडर, हल्दी पाउडर, नींबू का रस, अजवायन, सौंफ, तिल, एक साथ मिलाएं। अदरक मिर्च लहसुन का पेस्ट और सभी चीजों को अच्छी तरह मिला लीजिए. * गेहूं का आटा, बाजरे का आटा, चने का आटा मिलाएं और सख्त आटा गूंथ लें। * मुठिया बनाने के लिए छोटे-छोटे हिस्से लें और उन्हें अपनी हथेली से दबाएं। * स्टीमर में थोड़ा सा तेल लगाएं और मुठिया को 15 मिनट तक भाप में पकाएं. * इन्हें ठंडा होने दें, फिर छोटे-छोटे टुकड़ों में काट लें. तड़का लगाने के लिए:- *तेल गरम करें, उसमें हींग, राई, करी पत्ता, कटी हुई हरी मिर्च, मुठिया के टुकड़े डालें और अच्छी तरह मिलाएँ। *अंत में तिल और ताज़ा हरा धनिया डालें। * हरी चटनी के साथ परोसें।

Methi na Muthiya🤌🏻& winter calls for all things green 🌿 Ingredients: For Muthiya:- 3&1/5 cup Methi leaves 1\2 cup Coriander leaves 1/2 cup wheat flour 1/2 cup Bajra Flour 1\4 cup Chickpea flour Salt as per taste 1/2 tsp Baking soda 1 tbsp Oil 1/4 cup Curd 1 tbsp jaggery\sugar 1/2 tsp Garam masala 1 tsp Cumin powder 1 tsp Coriander powder 1/2 tsp Turmeric powder 1/2 lemon juice 1 tsp fennal seeds 1 tsp carom seeds 1 tbsp sesame seeds 1-2 tbsp ginger chilli garlic paste For Tempering:- 2 tbsp Oil 1/2 tsp Asafoetida 6-8 curry leaves 1 tsp Mustard seeds Green chilli chopped 1 tbsp Sesame seeds Fresh coriander leaves PROCESS For Muthiya:- *In a bowl mix together chopped methi leaves, coriander leaves, salt, baking soda, oil, curd, jaggery or sugar, Garam masala, Cumin powder, Coriander powder, Turmeric powder, lemon juice, carom seeds, fennel seeds, sesame seeds , ginger chilli garlic paste and mix everything well. *Add Wheat Flour, bajra Flour, Chickpea flour and make a tight dough. *Take small portions and press them using your palm to make muthiya. *Apply some oil in the steamer and steam the muthiya for good 15 minutes. *Let them cool down, then cut into small pieces.
