Love everything about this cook, because I do the same thing. The only thing I would do differently is use a aluminum foil ball vs that wore brush. It can leave wire pieces on the grate that can get on your food. Love the videos keep them coming.

I can't tell you that. It depends on the size of your bird. Use a thermometer and stop cooking when it gets to 165° in the breast

Sweet. A quick and clean smoke on those sausages. I'm getting tired of "smoked" everything off the grill. This looks like a nice, subtle amount compared to the pink ringed roasts that I keep pulling off my grate. After eating like that x number of times already this summer, your method seems about right.

Did you hang the ribs opposite side of the charcoal. Also if you do more do you start your coals in The middle and heat from the center or light from the side and burn across the charcoal

Short wrap, enough to make them tender but not sweat the rub/bark off. Last set I did butcher paper because that was about a 3 hr wrap. Just depends on how the cook is running
