Nice video chef pro ! , i dont buy benriner for his high cost to ship my country 😂 argentina , i found chinese seller in Aliexpress sold original knives japanese and mandolines japan style from shyangtian brand of Taiwan original 😮 , when i open the box includes manual and said: With much appreciation, owing to your superior intelligence and to love to use our unique Turning Shredder & Shyang-Tian Mandolin Slicer so that these unique products always sells well and with booming sales up to today😅. This brand has good reputation but no have too sellers like benri , or chiba haha.

Hi Brennan, I've had Super Benriner No 95 for years, but recently I somehow managed to tighten the wheel very hard and now I don't know which way I have to turn it to untighten it. If you flip the mandolin so that the wheel is facing up, which way do you turn to untighten? Thank you so much.

Chefs need to understand one thing, their value. If a billionaire can fire you simply because of one issue, or maybe two or three, then they aren't worthy of you. More than likely, it isn't the billionaire but someone they hired to 'keep the peace.' That is why I will never put anyone between my food and the provider-unless it is a taster who is being a prick. Rarely is it the owner who fires anyone! That's the shit from the movies.

Ah yes, the politics game. Something I was never very good at. Good food usually wins and gets you close to the yacht owner. When that happens there will be new snakes in grass as management gets a bit touchy, especially if they're awful at their job. I'm happy to be away from it, at least for now.

Hey Brennan; since you a chef I want take this opportunity to ask you this question. Whenever I try to pan sear a piece of meat, (chicken, pork, beef steaks) I seem to not be able to caramelize the middle of the meat. I place the meat in the middle of the pan but I seem to always form a ring around the middle. I want to get an even maillard reaction on the meat like I see when people grill/broil it. Tell me what is going on please. Maybe if Nina sees this she can answer too.

Hmmm, I think maybe your pan isn't flat? Having a good pan is really important. Also making sure your protein is dry helps a ton. Try using a cast iron skillet. @@MbisonBalrog You shouldn't need a protein press unless it's very thin. Chefs don't use protein presses, maybe YouYubers do but there is no need for it unless for smash burgers.

Yeah there are crocs near Airlie. Why are you scared? There are a handful of attacks annually nationwide. Americans are more afraid of crocs than the locals are.

Not a bad spot up there. Bit sticky in summer, otherwise very good. Sister lives in Proserpine. Reefs OK, been bleached a bit. Used to have more colour. Wait for your next travel vids when you get back.

Hi Colin. What are your thoughts on bleaching? I hear mixed messages from scientists saying its our fault or that it's part of the life cycle of a reef.

@@OliveOilandGasoline Sea temps are rising and the little critters that give the colour bailed. Bleaching, has been the worst on record in the last decade. The reef still exists, but is getting sicker. Climate change is real. The effects are starting to happen, slowly, insidiously. Like the frog in the pot of water that keeps getting hotter, until it boils/dies, without the frog realising it's peril. Even Nina would say the reefs a wan version of what it used to be. I certainly can/do.

@@colinross6259 There are plenty of people that say that this is also a natural occurrence. Our lifespans and human record are not quite equipped to recognize what is man made and what is the natural life cycle. More studies need to be done.

@@OliveOilandGasoline Lol, 97% of scientists believe man/women caused. I'm 66 now and was a garbo for 20 years. Starting 48 years ago. Everyday I went to work I saw the sunrise and worked outside in the elements. It's changed. Rather than argue endlessly, the easy question I ask now to climate change deniers is "if your wrong, what's your plan B". Not one has given me a thought through response.

Camping, but on the ocean!!! That is how you fall in love with the sea all over again! I would love to do a trip like that! It also doesn't hurt that you have no responsibilities on this pontoon boat! ;) Also, you Nina didn't arrive while you were there? She said in her last Vlog she was heading home for this leave period. Finally, all sailors know what it means to spread ashes in the ocean. May it continue to bring you peace, Brennan.

Thanks for the kind words about the ashes. It helps me remember him and to keep him in my thoughts as much as possible. I've afraid he'll fade away. I missed Nina by days, twice in 2024 but we had and epic night out in Fort Lauderdale. She was dressed as 'Teeth" and I was 'The Tooth Fairy'.
