That’s definitely an option and thank you for mentioning it. I personally like the fizzy consistency of a still active bottle and the fridge keeps is more or less in suspension. BUT simmer to stop fermentation, correct. Thanks again for commenting!

3-4 months is the usual safe answer, but I’ve had bottles of hot sauce last far beyond that. Always be careful to make note of any color, smell, and taste changes. It’s always safest to toss something that seems off and make a new batch.

Thanks bud! I haven’t made a sauce with honey, mostly because like you pointed out, I feel like the honey would eventually settle/glob together. You could probably blend it up to be viscous but what would that look like after sitting in a bottle for a bit and how hard it would it be to blend again in the bottle? A pivot from that idea that I’ve been tinkering with lately is Hot Honey, but it doesn’t seem like it would be a complex enough recipe to make a video for. You literally just add spicy ingredients to honey and let it sit. lol

Just sub to you. Nice cook! Yeah I got an offset smoker lastyear. Lot of work. It's fun but with small firebox I'm haveing to use small splits of wood. Got it down packed now can't wait to do these 2hour ribs with them. I'm realy not a big barbecue sauce person and have found a good rub yet. I've got a cabinet full of meat churches. I tell you what if you like a little spice to your meat try Slap your moma seasons. If yall haven't tryed it give it a try. Please recommend yall go to rub.

If you end up scorching one by accident, the sauce is forgiving. 😂 I’ll have to give a dry rub a try next time I run these.

Love pickled eggs from the store-bought ones. when I do them there are plain, do you poke the eggs with a toothpick or anything? I find that I have to drink the mix with the egg to get the real flavor.

I’ve heard of the egg poking method but haven’t tried it myself. I typically just avoid the eggs for 2+ weeks in the fridge and once I break into them they’ve had enough time soaking up the brine by then. You’re welcome to try the poking method and please report back!

If you tested the PH I'm sure it would be shelf stable, but I always preach keeping hot sauce in the fridge as to not risk getting people sick who mishandle food and then blame the guy giving out free recipe advice on the internet..... I've given literally hundreds of bottles of this hot sauce out as gifts. Works fine as a gift. Thanks for watching!

For smoking, I'd use a lower temp but still hot enough to cook and soften the ingredients. Let's say 250(F) for 45 minutes to an hour? You'd just have to keep an eye on them and make sure they're properly softened before pulling them. The smoke will definitely get into them in that time frame. Let me know if you give it a try and what ended up working for you!

@@outdoorindoortexan I ended up smoking the habaneros, apples and garlic for 1 hour at 250. I used 1 cup of Apple cider vinegar instead of white vinegar. And used half a tablespoon of sugar. It has some heat but the flavor is incredible! Thank you for the recommendation and delicious recipe. 🫡

Wow, what a great tip. I have a large natural gas grill with a separate section that is a seer burner. I did a pound of flank steak at 550 deg and approx 3.5 min each side but flipped it about every minute. I got a great char on the outside and perfect temp on the inside.

It’s tricky but I would try to add a small amount more of sour cream and mayo, then taste, and repeat if necessary. Small is the key word here though. You can always add more but you can’t take away, so keep that in mind while tinkering. Hope this helps!

I tried the recipe just the way it was and was happy with the results and the spiciness. I used plain Greek yogurt in place of the sour cream and it tasted really good. All of the other ingredients were spot on. I’m very happy with the results, this will be a staple sauce like my Wife’s home made Ranch Salad Dressing. Thank you, 😉

I'd let it boil for a couple minutes and then bring it down. It's simply to ensure everything is combined properly. After filling your jar, let it cool enough to be able to pick it up by hand, then fridge. Thanks for watching!

Green serranos have a more fresh pepper snap taste compared to the acidic semi-sweet flavor of a fully ripe red serrano. Red ones tend to be hotter as well. If all you have are red ones they’re not going to ruin the recipe but will taste slightly different and perhaps be a bit spicier. @@outdoorindoortexan so I did everything but the Mexican oregano and I used off brand vegetable oil. It doesn't look anything like yours nor does it taste good. It doesn't taste anything like the Verde sauce I get from the taqueria restaurants. I'm so upset 😭 I love this sauce and want to make it on my own but there's so many different recipes and ways to make it.

Is there anything else you did that wasn't in sync with the recipe? Did you use a high speed blender? It needs to really get up there in speed to create that creamy texture.

I subbed in Serrano for Jalapeño in my cowboy candy. Never thought if myself as a heat weenie, but it was unpleasant. Taste is not all that similar. I might try the sauce thought.

They are sneakily hotter than jalapeños that’s for sure. You probably know this but to cover some basics, you can always try to remove the seeds and most importantly the white veins inside the peppers to help reduce the heat level. I put my jalapeños in the oven last time, but that does simplify things a lot to just cut em up and saute them. Been on a big jalapeno salsa kick and figured I could super easily make my own so here I am!

I like the sauté method only because I can control the amount of char on the peppers, but you’ll have more or less similar results with the oven. Fun to try different ways! If you have access to a grill or an open (clean) flame, try that too!

I used this as a base and used ripe serrano, jalepeno both red, green and orange habanero and a lot of poblano because half broke off. Plus 50+ ,cloves of garlic already peeled. We will see how it tastes. Haha so it's not your recipe at all but was the base. And so far it's been amazing 🎉 I just used what i had and roasted all of them and used peppers that were ready along with pre peeled garlic from my Asian market

Vinegar and oil infused with capsaicin, sure. Are you familiar with Cajun Chef, or Trappey’s, or Texas Pete, or Louisiana Brand? They all sell a form of this hot sauce on store shelves. Long time southern staple synonymous with greens and black eyed peas. Thanks for watching!

Yes but it would be an entirely different recipe. Fermenting becomes shelf stable without the introduction of vinegar. This being a vinegar hot sauce it relies on the acid dropping ph low enough so it’s shelf stable. Technically if you check the ph of this recipe is more than likely shelf stable but I prefer to tell my audience to be safe and keep it in the fridge. Garlic is also one of those ingredients that has a danger of developing botulism when prepared a certain way and not stored properly, so I just generally stay away from fermentation sauces heavy with garlic. Sorry for the paragraph and hope this helps!

Try my recipe: 8 serannos, 4 Hungarian hot wax 4 Jalapeños, 1 Bhut jolokia, 1 Trinidad Muruga Scorpion, 1 Habanero, 1/4 teaspoon cumin, 2 tea spoons dried cilantro, 2 cloves large garlic, 1/2 tea spoon onion powder, Teaspoon salt, 2 1/4 cup vinegar. First cut your peppers add Garlic and cumin salt onion powder,cilantro Place in a skillet add 2 cups of water medium heat for 20 min. Once done. Place in blender and puree the peppers with the white vinegar into a sauce.

Just made a batch of this. I'm not trying to knock your recipe, and I know everything is subjective, but I felt like despite having 20+ cloves of garlic, it doesn't come through as strong garlic forward... the 400 degree oven I think mellows out the garlic flavor too much. I also felt like the lime juice was a bit out of place for what this sauce was going for... it distracts from what should be the garlic / habenero taste. Also, a bit too much vinegar I'd say.. again, this is just my opinion and whatever you like is your own personal preference. Thanks again for taking the time to create this video, and I look forward to trying more recipes.

There is a hefty zip of vinegar, you’re 100% on that. Maybe try a different vinegar or cutting it with a touch of water. I hope you try it again and share your tweaks that make it right for you!

@@outdoorindoortexan Yeah, I know the flavor can develop more over time.. and to be fair, this was just based on my initial first taste right out of the blender. I'll see how it is in a few days. Also I just want to clarify, I DO like it, but I think it just needs some tweak for my own personal preference. I was really intrigued by the habenero / garlic heavy combo. I'm going to experiment with it a bit more.. thanks again!
