I believe they cost a lot more. I thought about single door but didn’t want to lose all the heat when I opened it up and that is why I went with the removable middle grate tracks for a whole hog. You could probably get double doors on one side and a single door on the other side if you wanted.

@@korycoleman removable tracks in the middle only for the one in the center correct and is there a reason why you didnt drop the bottom grate to line up with door for just a little more space you think that is a good idea or bad

@@soloM81 mine are removable only in the center middle track but you could have the tops removable too if you wanted. Mine are above the opening because I wanted them to slide out. The tank is 37” in diameter so I didn’t want to have to reach my head in there with a fire going. They can do it either way.

I actually have two of these old tanks and I thought about turning morning to a smoker and grill myself like in one compartment short and the other one loan just for the purpose of being able to do things like cook a whole big or mustard chicken wrap one time while I cook burgers or grill shrimp and stuff like that on the other side

If you are using the weber wax cubes then yes you are ending nothing but lighter fluid. I started off using those years ago but quickly started using the royal oak tumble weeds.. much better and quicker

I’m waiting for my 250 gallon. I think I want mini me version of yours. LOL. Is the connection with the fire box and cooking chamber a little different? It seems the main chamber comes off the top of the firebox more than the end. Anyways it’s beautiful. I am patiently waiting for my turn. Congratulations.

I think the firebox is just a bit lower than the stack which is good in my opinion. A 250 replica would look sweet! I had spoken to a guy who is getting a 250 and the length was about the same as the 500 so maybe you want to go all in and get the 500? 😂 now that I have spent your money I will let you be. Lol

Do they sell the 150 with an insulated box? I come from the kamado joe world and love pits. Problem is my kids, I don’t always have 12 hours to be in front of a pit tending to the fire every 20 min. What are the potential trade offs or cons of a 150 gallon pit with an insulated fire box?

They can insulate any of their fireboxes if you want them to. I don’t think there would be any negatives to it just that it would cost more. My 150 was 1/2” and it would take a split every 45min or so.

Not at all. I loved this offset and it is the reason I moved up to a 500 gallon from Shirley. My only regret of getting it is that it caused me to want a larger one. LOL They are known for reverse flow but they can do it all. The 500 draws like no other!

@@mannyr8795 I bought this one used. I’ve had 10 Shirley’s. No regrets on any of them. They do have a waitlist but I think it is good to make sure you get what you want. When your name gets called you are like a kid on Christmas. I’d go for it!

Hello again, Thank you for your reply. I really appreciate it If I were to have a SM built, would it make any sense to have its bottom made of thicker steel with an opening in the middle with a slide mechanism and a steel box beneath it to sweep the ashes into. I think it could be on tracks so that after sweeping the ashes into it you would dispose of them. This obviously would eliminate the slide out ash tray. But, I am not sure whether it is saving much time. What do you think? By the way, I think your idea of a drain in the SM is a wonderful idea

I think that would be interesting to see and be nice. Personally, I don’t have a problem with the slide out ash pan though. The ash pan is a little heavy but manageable and I wanted it thick to keep the heat off the bottom. If on a budget I might look at extra cooking space or something to enhance the cooking experience vs the cleaning experience. I can literally pull the ash pan out and throw it on the ground and put it back in the cooker in a minute or so. But I do like your idea.

Love it. You get a little hot spot next to the firebox but I also get that on traditional offsets. You can adjust the damper to wide open or barely open so you can definitely control the temps. I won a KCBS backyard event with it so I am more than satisfied. The versatility is unlike any other cookers I see on the market. Only thing I would do differently is add a drain to the Santa Maria side. However I just put down natural oil dry on the ash pan and that takes care of it.

I left them connected and just worked around them. I believe I zip tied them out of the way. It wasn’t a problem for me because I don’t remember it being an issue. The major problem was compressing those springs!

Love my Shirley...yours looks fantastic. I'm glad to see the welded dimes are consistent on your smoker as well! The quality of their work is amazing. Additionally, I often notice on direct flow offsets that the bottom grate doesn't pull all the way out, I think you'll enjoy the Shirley shelf design. Happy cooking!
