Every Time I see Tony I am catapulted into a state of joy yet humbled into a state of bliss only reached when I hop onto the Bourdain train! With a lot of this sort of thing, we often see how things appear, through the lens of metaphor and -in a way - gullibility and extensive preparation… we often think that the images flicker and attract, with colour and nouse. Soon we realise that all is death and illness with disappointed primates juggling their fears and stresses - oh dear 😢

One of the greatest joys i have is an oyster farm, across the bay from Homer Alaska. I can motor over, grab 50-60 oysters, and eat them*with some friends) less than 30 minutes after they left the water. Pure joy.

Thomas Keller is really something else. Check out his books if you ever get a chance. His understanding of the science of food and the culinary arts is otherwordly.
