i got my Virtuoso today and i am underwhelmed, but I am not ready to give up yet I followed the cheese and onion recipe to the letter What I pulled out looked like Frankenstein's creation, not those beautiful loaves in all the videos(Yes I had the paddles lined up correctly) The most disappointing thing is the texture and the taste I can smell yeast and somehow inside the crust the bread seems undercooked, all I taste is maybe onion and undercooked bread,it also feels undercooked inside Does anyone have any suggestions to help me get those beautiful loaves I keep seeing in these review and instructional videos?

You mention kneads twice. How long is the second knead? What is the rest in between the 2 kneading functions? I have a Kitchenarm and can program it but I don't have the option to knead in between rises.

I just made this today and it was awesome! I had an older model Zo and just upgraded. In the past I’ve used the vitamix dry container to grind wheat berries but just treated myself to a Mockmill 100. First time using that and the new Zo and I think it’s the best whole wheat loaf I’ve ever made! Even the crust is good! The texture is amazing compared to the heavy dense breads I usually end up with.

There actually is a difference between shredding and grounding. The shredding metal with destroy the gluten in the grain.. and the heat will harm some of the nutrients. The stone is more mild as it wouldn’t destroy the gluten, or nutrients.

How is the sanitizing spray working out for you? Ours seems to work fine but it developed some brown staining on the inside of the bottle. Doesn't seem to negatively affect it, but it looks dirty inside. We use RO water with a mineral cartridge to ensure it works. You can definitely smell the O3 when spraying and letting the water sit for 30 sec before cleaning.

Zoharushi, a ridiculously high priced bread machine! Fancy advertising! All a bread machine needs is a mixer, a baking element, a computer and a case. Of course, it should be built to resist rusting of the spindle and its bearings and have a reliable motor and an attractive, durable case. Even with inflation, that should not cost more than $100.00. It had been only $60.00, a year ago for such a machine.

I wish it did not cost what it does, but neither should most food we eat. The upside is that it allows you to program for homemade functions. Which I use for my pizza dough, and working on others.

You can use 3 cups of hard red or hard white. It needs to be hard. Don’t do 3 soft wheat. You can do maybe max, 2 soft.

Hard wheat has a higher protein content aka gluten as soft has lower gluten.

I mill my wheat in the wet container of my vitamix. I do it on the highest speed for 20-25 seconds, 1.5 cup berries at a time. I’m guessing that is not fine enough (which I actually prefer to slow down digestion), my bread is still very soft, it “looks” crumbly though but I’m guessing it’s supposed to be this way. ? I add 3-4 Tbsp vital wheat gluten to 3 cups wheat berries (580 g). The Zo manual recommends that amount of gluten for whole wheat. What do you think? I also don’t add as much oil as I see in most fresh milled recipes, they call for 0.25 cup of oil, I only do 2 Tbsp.

@@TheWholesomeHome I got a mill! I’m so happy. And I developed a simple lower fat 5 ingredient recipe where the bread is still perfect (I’m trying to cut down on calories). I use only 1 Tbsp of extra virgin olive oil for 3 cups of unmilled wheat berries (2 red, 1 white). If anyone is interested in lowering the calories of your freshly milled bread without lowering the quality, I can share my recipe - I haven’t seen this online yet. I also dropped the vital wheat gluten because red wheat is already high protein.

The bed itself is super heavy. I haven’t done that since I use a mattress protector on ours.
