Do you think using apple sauce in place of coconut milk, or just more plant milk would work? Thinking of ways to avoid opening a whole can for 1/4 cup 🙂

Hello Tania, great question! I think more plant milk would be a great option. The muffins may come out slightly less moist, because you'll be missing out on the fat that the coconut milk provides, but the bananas should be enough that you won't miss it too much. As for the applesauce idea, it would certainly work, but I think it would probably be redundant, given the quantity of bananas in the recipe. I have one other tip, which is that when I open a can of full-fat coconut milk for a recipe like this, I pour the rest into an ice cube tray or silicone baking cups and freeze it in two-tablespoon or quarter-cup portions so that next time I need some, I can just defrost only what I need. Great question, Judy! I'd rather see you substitute peanut butter in place of the almond butter, if you're looking for a peanut-y flavor, and then, if you don't have fig butter, I'd recommend substituting something else fruit-based, like applesauce or apple butter or pumpkin butter. You'll maintain the texture of the granola better that way, with a balance of what is essentially pureed fruit and pureed nuts, rather than going all the way over to entirely nut butters. Hope that's helpful! 😀

Ooooh, I have a large bag of dried figs, could I soak them and use those instead of fresh figs? If so, what do you think the ratio change would be?

Ah this is a great question. I know dried figs are way more readily available than fresh. I have not tried this myself, but I would say yes, it's possible. Once reconstituted by soaking in hot water, dried figs should be soft enough to blend in the food processor (but I think it'll take time, like potentially overnight) and then you're basically removing the water again by cooking it down anyway, whether using fresh or dried figs. I think this will work. As for how many dried figs to use...my best guess is about half the weight. So since my Fig Butter recipe calls for 2 pounds of fresh figs, try 1 pound of dried, reconstituted, and go from there. Please let me know how it goes if you try this, I would love to hear about it! *However* if you want to try this granola recipe soon, you can totally substitute applesauce and 1 extra tsp cinnamon in place of fig butter, and it'll still be super yummy! 😀😀😀

I have made this recipe 5 or 6 times, and each time I add a twist based on what I have at home and it never fails to be amazing! I've made them with chopped dates instead of the choc. chips, adding orange peel powder, with carob chips, and with additional nuts/seeds. Thank you!! Ooh good question. I use about 2-3 tsp (a scant Tbsp) of JOI almond base for about 16 oz (2 cups) of water, and then I blend it up in my NutriBullet blender 🙂🙌 The jar of JOI is shelf stable so you can keep it in your pantry, but once you blend it into almond milk of course you'll need to store it in the refrigerator 🙂

What other veggies can be used besides pumpkin? Are the different flours good for diabetics? The donuts look delicious.

Thank you so much for the compliment! If you don't have canned pumpkin, you could substitute pureed sweet potato or pureed butternut squash in its place. Failing that, you could try applesauce, but if you go that route, I'd recommend finding some that's on the drier side (less watery), because sometimes applesauce has a higher liquid content and it could alter the consistency of the batter too much. As for the flours in the recipe and diabetes, I can tell you that these healthier donuts would be much better for a person living with diabetes than a traditional donut. That said, they should still be considered a special occasion treat, given that this recipe contains what we might consider to be "yellow light" foods like whole grain flours and pure maple syrup (as opposed to "green light" foods like whole fruits and vegetables, for example).
