Vanilla Cinnamon Fig Butter is super versatile! Here's how to use it:
Spread it on whole grain toast, pancakes, crepes, or a cinnamon raisin bagel!
Stir it into oatmeal, yogurt, or hummus
Mash it into a baked sweet potato, then drizzle with almond butter
Spread it on a sliced banana and top with pecan halves
Mix it into muffin batter
Use it to make my Homemade Granola (recipe coming next to the channel)
Or just indulge in your homemade fig butter by the spoonful 😆😋
We're not doing any "canning" in this recipe, so you'll store your fig butter in an airtight container in the fridge for up to a few weeks... if it even lasts that long.
It's pretty irresistible!
Vanilla Cinnamon Fig Butter - Full Recipe
Yields 4 to 5 cups
Ingredients:
8 large Medjool dates
2 pounds fresh figs (any variety)
2 tsp lemon juice
1 Tbsp vanilla extract
1 tsp cinnamon
Instructions:
Remove the pits and stems from the dates. Transfer them to a heat-proof bowl and cover them in hot water. Set aside and allow the dates to soften.
Prepare all the figs by cutting away and discarding the stems, and then chop them into quarters. Transfer them to the large bowl of a food processor.
Drain away the soaking water from the dates. Transfer them to the food processor as well.
Add the lemon juice to the figs and dates. Place the lid on the machine. Process until the fruit blends into a puree. You may need to stop the machine occasionally to scrape down the sides. Continue blending until smooth.
Transfer the fruit puree to a large sauté pan. Set the heat to medium-high at first, and begin stirring. Once the puree begins to simmer, reduce the heat to medium-low. Continue stirring frequently for 25 minutes. Set a timer to help you remember.
Add the vanilla extract to the pan. The quantity is not a typo; 1 Tablespoon of vanilla extract equals 3 teaspoons. Stir well.
Add the ground cinnamon to the pan. Continue stirring throughly.
Allow the fig butter to continue to cook and thicken, stirring frequently, for another 5 minutes. When it becomes dark brown in color and thick enough that it stands on its own (see video for a visual), it's ready. Turn off the heat and allow it to cool.
Transfer the fig butter to one or more airtight containers and store it in the refrigerator. Enjoy it within a couple of weeks of making it. Share some with your friends!
