The difference in flavours and texture between mushy peas made from sweet peas and marrowfat peas is night and day. I've made both and will opt for mushy "marrowfat" peas every time.

I don't know man, I agree with you in principle but I'm finding Skeleton Crew just delightful so far. And (Iknow its anecdotal) but I'm hearing kids are enjoying it too. The mundanity of the "space suburbs" setting is used very cleverly imho to set up an interesting mystery. Let's hope they deliver on the answers they promised, cos as we know Disney Star Wars has a terrible track record on that front.

Everything in this vid is pretty much spot on except I would pull the venison after searing on HIGH heat, then lower heat and throw in garlic/shallot, once browned up a bit, then put butter and rosemary/thyme in along with adding the venison back into the pan. At this point bast just like in the vid but pull at 110 degrees no more for a nice rare/rare medium. I cook filet minion like this and its really good.
