For anyone using a ziploc bag with this method in 2024, have the water squeeze out the air by lowering the steak (while in the ziploc bag) into the water until the water level is just below the ziploc bag closure. Don't dip it all the way into the water or the water will go into the bag. Close it once the water is just below the seal. Gets the air out really handily

After you square up the ribs, what do you recommend doing with the excess meat that you cut off of them?
