Thank you for the video. Whenever I try to make the flatbread with equal quantities I never get a dry dough like yours it’s far, far wetter. By the time I get that consistency I’ve used twice as much flour to yoghurt.

I use very thick plain or Greek-style yoghurt, it's not that runny. Perhaps try adding the flour gradually until you get the best consistency? Let me know how your breads turn out. Rhiannon.

I couldn't tell if you mixed the starter first before you dropped the spoonfuls in the water. My starter tripled in size in 10 hrs after feeding. Should I put it in fridge or keep feeding in the 24 hrs. I'm on day 5

@TamaraRobinson-i8z thanks for watching. I just take a spoonful without mixing to do this test. Once your starter is active, you can move to store in the fridge, or use it when it's at peak activity.

This was quite good and your tips on temperature were quite helpful. It is July 19 and I am living in Malta: hot and humid. But do you have any idea as to why my bread is soooo chewy. Its only gotten this way since the temperature went into he 30 -ties with humidity leves of 60 -70 %.

You may want to slightly lower the water content of your dough as everything, including the flour, will be absorbing more moisture in the humidity. Use cold water too to slow rising time and help try to stop over-proofing in the warmer weather and collapse. What sort of bread do you bake at home?

@@TheEpsomBakehouse I just started back baking - my 5th grade teacher taught me how to make a classic wheat and I made it a lot when I was younger but haven’t in yearssss, in rusty😄 Lately ive been making the simple artisan no knead recipe, loving it! Been making it weekly but want some variety in the flavor. Not ready for the more time consuming recipes yet. But I LOVE sourdough & want to try that soon.

Thanks for that. I'm a novice at this and am so confused by the different approaches. What do you say to the idea of putting your dough in a low oven to help or accelerate the rise? I don't really like this idea but is there anything against it?

Thanks for watching, I'm glad this was useful. You don't need to put your dough somewhere very warm to help it rise - sometimes this can actually dry it out or stop the yeast. Hi Leanna, Just found your website, my name is Frances in Canada and I have just started with a sour dough starter and I am on day 1. I fed it today and it looks fine. Question is how many times to feed it before I can use it for baking bread. Also should I be discarding some starter each time I feed it??

Hi, thanks for watching and for your comment. Yes, this test still applies. It can be easier to over-knead your dough too in a mixer, so do stop the mixer and check your dough occasionally during kneading. What type of bread do you like to bake at home?

right now i am learning to make wheat germ bread, using white flour, and molasses. My next target is mock Hovis, using brown flour, molasses etc. My biggest issue is I never really know if I have reached the point when my dough is ready. Several loaves back I though I had cracked it, but the results have either been to heavy (our local birds would not touch it) or edible BUT highly indigestible. I seem to stop just a bit too soon.

You are right👍👍👍 I have been making 100% whole wheat bread without adding SUGAR or any other bread flour, but my dough still can rise properly.

Can you do something to get it going again? As in, is it possible to make it puff up after it's been a bit drab? Can you stretch and fold or...?

Thanks for watching. If the yeast have completely run out of available food then the dough won't rise. If the dough rises too much just before baking, you can re-shape and let it rise again, but it may not rise that well. What type of bread do you like to bake at home?

Thanks for watching. Yes, unfortunately you can leave the dough to rise for too long. The yeast eventually run out of available food and stop producing gas that rises your dough. How did your cinnamon buns turn out?

I’m on day 6 of feeding my sourdough starter, but it smells acidic. What should I do? Also the ratios I was feeding it until now were 1:1. Should I throw it away and start all over?

Great tip on how to know that the yeast has risen enough. Many recipes call for "doubles in size", which is hard to judge in my opinion

@@TheEpsomBakehouse I haven't settled on a specific recipe, yet. Tried Mama D's Italian bread, which came out way too dense. I tried a twist loaf, which also came out way too dense. I made a basic bread recipe that included honey last week and it came out great. Part of the success of that one had to do with a better kneading techinique. Today I'm baking an olive bread.

Not sure if you have done a video on kneading, yet, but I had no idea how to do it - just kept squeezing the dough. Found a video that showed pushing across the dough with the heal of my palm and that made a big difference.

@@TheEpsomBakehouse Actually, I just took your Crusty White Sandwich Loaf course and it has a very thorough explanation of kneading and shaping. Baked the bread and it came out almost great. The only problem I had was in following directions! I split the ingredients too much and wound up with a loaf not much bigger than a roll, but fully risen and very tasty.
