for home cooking that is very high standard! i think our chef here has had some training before. actually if you want the batter to be really crispy, try using potato starch instead of corn starch. potato starch is highly hygroscopic, it absorbs moisture and keeps the end product crispier for longer 👍

Thanks guys. You can't beat catfish for a good feed. I love to eat them. LOL, your chips looked complex but yum. I wash my spuds (potatoes) , keep the skin on, cut put them in an air fryer and spray (can) with some oil, also yum. Nice sized flower crab chaps, great you return fish not needed.
