This is a a great recipe. I like your approach and you cover everything. Only thing I don’t understand is why you added the quail eggs to the soup base before serving. This would overcook them, right? I would just add those into the bowl as you’re putting the bowl together.

Thanks for your love and support! It’s pretty hard to overcook boiled eggs 😅. The eggs dont get hot on the inside when you add them in as toppings. I Don’t like the hot soup with cold eggs. Learned this when I saw people selling them in VN having the eggs inside the soup.

Is it the long leaves? Different people use different ones but some common ones are lemongrass or pandan leaves.

You can use half sake and half mirin. But mirin is just sweetened sake. So I used full part mirin.

I used to go passed the back streets of the mariner and I would go and see this lady, I cant remember her name. She would wake up at 3am just to start the bahn Canh and it was the best noodle soup in the world!

Ever had ceviche? Or beef Tartar? There’s this concept of cooking in lime juice or acidic juice. The searing of the beef is just for beef fat to be absorbed in the meat. And yes… it should be raw lol

It’s actually cooked with lime juice. Kinda like ceviche or carpaccio. Beef can be eaten raw too if you want… dishes like beef tartar is straight up raw beef.

These are the authentic rice paper lol in VN the rice papers are made so thin that it doesn’t require you to soak in water. You rarely see anyone dipping rice paper in water Vietnam. They finally have these fine rice papers in the US now! :))

Honestly, after making the pate… I kinda feel guilty adding mayo to my sandwich knowing that the pate packed a bunch of butter and pork fat already 😂 but it was soo gooood!

I always find the premix ones aren’t as crispy. It’s pretty simple mix and the Ingredients are easy to get now.

Are you able to show us how to make the small clear broth soup w/ clintro/green onion garnish on top that always come with that dish when ordering? I really love that clear broth soup. Do you by chance know the name of it?

The clear soup broth in restaurants is an extra complimentary side that they serve up. If you go eat at a com tam place in VN, there’s no soup. The soup usually is a pork base soup that they use for their other noodle soup dish on their menu. Or sometimes pho restaurants give you pho broth too. But usually It’s a “Hu Tieu” broth made from pork bones and dried shrimp. I will definitely do a “Hu Tieu” video soon :)
