One little issue i have. Getting the cheese to melt all the way through. Is my oil too hot?

@@FXSTB-i it can be tricky with keeping the oil at the right temperature, but that’s the trick. Try not to overcrowd the pan as that will bring down the temperature. Freezing the cheese before for a longer period of time can also cause the cheese to not melt all the way through

try pre buttering 2 bits of bread then throw cheese in a pan stick then place the bread on top shake the pan till they move fold them together, nowt like caramelised in the centre followed by melted cheese and soft bread it is melting into! just don't forget why you buttered the outside to bring that crunch!

I think you should considering making a roux and adding just a bit of cream, instead of it being full cream sauce, that way you will make it more about the mustard/fish and also remove he separation of the fats in the sauce.

@@Endzior I was thinking of doing the roux which is great but I wanted it to be a “lighter” sauce. I think blending the sauce beforehand would have helped with the separation of fats. ✌️😊

Gonna sound crazy, but if you want the real experience... use Mancini (Mancini Packing Co is the brand) jarred Fried Peppers (sweet w/ onions). Literally just search "Mancini Fried Peppers". I know, I know - using something from a jar sounds counter-intuitive when you have fresh ingredients, but trust me on this one.

We used to eat pepper and egg sandwiches often. Mostly because Mom could feed three boys for cheap. It was filling and warm in the belly. She'd usually serve fried potatoes or if we were lucky enough to have leftover mashed potatoes, potato pancakes. My favorite. Inexpensive, fast, and easy to prepare.
