Grandma Gloria, I always use lemon extract in my sweet potato pies and my candied yams along with vanilla extract. This is how I was taught to make it too.

I was told it should not look like cake batter. It's suppose to be dense, why we didn't use a blender. We use 2 eggs only not 5 eggs. The souffle texture is commercial not homemade.

I see why their pies are lighter in color they beat it so much. I've always known the sweet potato pie to be darker orange brownish in color with more texture.

I were taught don't beat it too much, and we don't take out strands, it's apart of the potato that's the whole point in cooking a sweet potato pie and that's the difference between pumpkin and sweet potato pie--,if you want smooth you eat pumpkin pie the sweet potato is not a smooth texture.

Greetings from Escondido Ca Happy November Grandma Gloria another year 2024 I will be serving your amazing sweet potatoe pie. This Puerto Rican married to a half African American Half white man sure enjoys what you taught me step by step. My husband lost both parents Mom 5 yr Dad 2 yrs ago very young. 64 and 77 yrs old and I can't tell you how happy it makes me to cheer him up with some good pie. Especially in a time of year for family. This year we will have a touch of all our ethnicities. Our daughter and Grandkiddos will be with us in Ca from NY!!!
