It's just the nerves spazzing out because they loose connection to the brain, this happens to livestock such cows as well, because they shoot a metal rod into the brain, causing an instant death most of the time. They start kicking wildly similar to the octopus.

because octopi have nerve ganglion in their tentacles. Their tentacles aren't actually alive. As long as the octopus has been killed very recently and is fresh, it will continue to squirm due to the nerve ganglion. That is also why in this video the tentacles squirms harder when coming into contact with sauce, because the sodium in the sauce causes nerve spasms.
