Good job! I'm getting back into canning and preservation - Trying to find the time is difficult. I waited until the Farmer's Market was over 10/28 and then whatever I've had left (tomatoes/pumpkins/onions/sweet potatoes) is all I've done so far - along with some apple pie filling. I did salsa and just canned some tomatoes (for chili). Made pumpkin puree, froze alot of minced onions, and put up chunk sweet potatoes and sweet potato fries. I would still like to dehydrate some herbs. My challenge during the growing season is finding the time to do any preserving due to my full-time job and then growing the veggies and harvesting and doing farmer's market. We have alot of chicken frozen from our pasture raised chicken operation that we do. Never done anything with eggs - that is interesting!

I'm a seasoned canner and think that pints are a good idea. I think I'll try that too. I usually can quarts. Our granddaughter came over this week because she was under the weather (cold) and wanted some soup. I opened a quart of vegetable beef and the rest is still in the fridge. You're correct about not canning noodles or rice. The only thing I can say is to be careful who you follow when you're learning to can. You'll learn later the things you feel comfortable doing.

I don't think there is an exact ration but as long as there is a good layer of salt in between the herbs, that's probably enough. The ball jar is a 24 oz, tall jar. I actually think it would do better in a larger, wider jar. It would have given me more room to spread the basil out.
