I enjoyed this as I have a lot of herbs right now. I'll try the herbed Salt. I'm told you can also freeze basil leaves if they are coated in olive oil. We'll see!

I don't think there is an exact ration but as long as there is a good layer of salt in between the herbs, that's probably enough. The ball jar is a 24 oz, tall jar. I actually think it would do better in a larger, wider jar. It would have given me more room to spread the basil out.
