I wonder if Lake Trout is the same as Mountain Trout / Ling which are the cousins of Whiting or Silver Trout?

To the best of my understanding, mountain trout is a true trout; so, it's not related to lake trout (or silver hake). But, ling is a kind of cod, which silver hake apparently is too. Both in the broader cod family.

Honestly, did the noodles tastes more Thai or more Chinese? Did the curry taste more Thai or Malaysian? I'm not saying the meal wasn't delicious I'm just suspecting that a fusion place can't master the food of any nation hence the variety.

The noodles definitely tasted Thai. The drunken noodles were recognizably drunken noodles and executed very well. They did not taste Chinese at all or cause me to wonder that they were anything other than Thai.

The curry tasted Thai as well. Not Malaysian or Chinese or anything else. Having had a lot of Thai food in the U.S., I recognized the curry as fitting solidly into that rubric: Thai food in the U.S.

And, I'd say that both concepts, the fish & chips and the Thai food, were quite independent. Nothing fusion about them. The fish & chips were British style and weren't "enhanced" or "altered" by an American fried seafood influences or any Asian influences. The Thai food wasn't "fused" with Chinese or other Asian influences.

I didn't mention it in the video itself because it was edited out. But, the reason that the two concepts co-exist under one roof in the same restaurant is because Audrey used to run two separate stalls in a local food court. One that focused on London/British fish & chips and another one that sold Thai food. Both stalls closed and she decided to re-open both in one place rather than have two separate restaurants. I guess, it was more cost effective that way.

That's exactly how I think of it. I love our traditional Chinese and Chinese-American fried rice. But, the kimchi fried rice is a nice change of pace. The spiciness adds to that too.

another great episode! China Taste is a rockville staple. They had a really good Dai Lo Mein and Noodle Soup in really comically big bowls. But they are famous with the dish you featured with the stir fry pressed tofu with pork. They had good stir fried rice cakes as well. I havent been back since COVID but glad the place is still there. As you mentioned, its one of the very few affordable asian places left in MoCo (at least before COVID) Have the prices went up by alot since COVID?

I frankly don't usually pay too much attention to prices. But, certainly, the prices have gone up since the pandemic. But, I can say this. There are less expensive places. Those places would be strictly takeout spots and definitely leaning toward Chinese American food. I think the portions at China Taste matches the prices.

I would thick a noodle of that size should be married to a thick meat sauce. That way it can cling to the noodles and make a delightful mouthful.

You make a great point. It didn't think of it. But, yeah, a thick meat sauce of some kind would go terrifically with those thick noodles. Kind of like how some Italian pastas are paired with a robust sauce.

Definitely not the best sample of Indoneian food, but it have its essence correct, sate is not peanutty enough I agree. Hate to say but I think those are Indonesian food that has been "westernized".

The Indonesian noodles, definitely need soup in it! The original one is not that dry unless you order it dry, it goes with the soup, the sambal, the chili sauce, fried shallot, and Pangsit crackers. The key ingredients are galangal, Indonesian Sweet Soy Sauce, Lemon grass, Indonesian Bailey leaves, Kafeer lime leaves, garlic, sesame oil, chicken stock, mushroom, and other spices on the chef's taste. Indonesian here anyway.

Yeah...I grew up favoring the baked cha siu bao although I liked the steamed too. Never had coffee with cha siu sou, however. It does sound like a great combination though. I can see how the hot coffee would be a nice complement.
