Tried your first method after KZbin suggested your video. After waiting 24 hours I opened the jar to be greeted by pretty much all liquid; with a thin coating of sour cream on the sides of the jar. What cream was there did taste great. I should say that I made this with a Meyer Lemon from my backyard. Supposedly, Meyer have a lower level of acidity than regular (Eureka?) lemons do. I'll probably try it again with a standard lemon. But, I was wondering if anybody here has tried it, and had it turn out like that in the video?

Beans should always be soaked overnight and the water drained and thrown out before cooking to get rid of the lectins. FYI.
