This is by far the clearest instruction for making cantonese braised brisket. Cant wait to make this and make myself a nice beef noodle soup. I think i'll add beef tendons as well. Thank you for the video

This is great. Maybe a dumb question -- why do you move it to a dish for braising? Why not just cover the wok?

My mum still makes this regularly. You should take a look at how they make glutinous rice, which is a unique southern style.

What an odd pairing of music. After the first few notes, I said to myself "are you kidding me?!" Of all melodies, you paired it to a baseball game?

Just curious as to why you wouldnt purchase fresh mushrooms (instead of dried) on a regular basis. Less work for everyone, no?

My Aunts who were poor scholars in the 70s in the U.S. would go to the farmers' market and get the heads the vendors threw away. They would have a feast! 🍥🍲 Nowadays, Asian food is famous so I guess less people throw away fish heads. 😍🐟🐠🐡🦈

With how much everything costs these days I only buy salmon heads, frames and belly. $5 AUD for a whole salmon frame including head gives me enough for 7 individual meals. $5kg for salmon belly scraps. Thanks for the video!

Wow, I mean I like cooking, but that's a lot of work for just a meal. Well is it worth all the grease in the air, the smell, and the dishes, and the sauce bottles? I admit I am a lazy cook tho lol :p😁😋😛

I was told my a a Chinese couple to just let them soak for about 15 mins squeeze the water out because when I soak for 6-12 hours extra you just loose all the goodness and flavour

the amount of cleaning following by steaming leads me to an unsettling conclusion. where are these mushrooms grown? and what fertiliser or soil/conditions are they grown in? ive heard many tales of the types of things used for fertiliser from faeces to....well, i dont want to go there. I hope im very wrong.

Shitake are cultivated on logs, feeding on the decaying wood, no need to worry about feces😂 Dried shitake can be a little bitter and woody. This method is meant to get the most pleasant possible texture and flavor from dried shitake, which

I'm confused by the mushroom rehydration. By rehydrating everything previously in one batch, you've now added a new step in thawing your mushrooms. You can rehydrate dried shiitake mushrooms overnight (same time to thaw) or with hot water for 30 minutes prior to cooking.
