Dessert nachos Ingredients: ( FLOUR Tortillas ) -340g Flour -175G warm water -65G clarified butter or lard -salt (Fry off til GBD and coat in cinnamon sugar) (“Cajeta”) -1 can sweetened condensed milk (Submerge in 180°F-200°F water in a pot for about 2-3 hours, chill in fridge til needed) (Candied pecans) -pecans -pure maple syrup to cover (Bring to a boil then lower to a simmer for about five minutes and or thickened, bake on a sheet tray with rack at 350°F til GBD) Finish nachos with strawberries and whipped cream

What a great recipe! I love your choice of toppings for the bunuelo chips! I also love the idea that you can tailor the toppings to your own preferences, and one of mine would be to use prepared cajeta (my favorite is Coronado) with drained pineapple chunks, drained mandarin orange segments, and flaked coconut. I should also mention that your method of making homemade cajeta reminds me of the only time a cookbook had to be recalled by its publisher. In the late 1970s, "Woman's Day" magazine had a crock-pot cookbook with a recipe for making cajeta (although they called it "caramel sauce"). They suggested that you put an unopened can of sweetened condensed milk in water in a crock pot and let it cook for several hours. Unfortunately, the recipe's creators neglected to mention what you mentioned, Matt, that an unopened can of anything would create steam in it and cause its contents to explode. Because of that danger, the publisher recalled the cookbooks and, if the owners of the cookbook didn't want to participate in the recall, the publisher instructed them to cross out the recipe. And I second the suggestion for more Mexican-inspired recipes. Love them all!

One dream segment I would love to see you tackle would be a series on the many different mole creations. I’ve heard of green, red, yellow…almost a rainbow of mole to choose from…maybe for Pride month?

I bought those raw flour tortillas from Costco to make buenelos for Christmas this year yes im cheating but they still come out good but i do miss my nana hers where the best❤ thats matt for the Mexican style food memories keep them coming
