It's not easy at all to follow a dietary restrictive plan for a few months. That's the whole point, it takes months for your body to adapt and give up things that you got used to, so you stop craving it. It also took time for you to start developing unhealthy eating habits.

What about FGL and A1C values for endurance athletes? Any of this information doesn't seen to apply to endurance athletes. I'm an endurance athlete cycling up to 100 miles in one ride few days in a row at a fast pace with no fatigue, and working out with with weights several times a week on empty stomach, and measured pre-diabetic (close to a cusp) on the FGL and A1C tests. Blew my mind.

Most important point: avoid conventional oats especially Quaker which comes from China and has deadly Clormaquat. US oats are sprayed in Glysophate! Only WF 365 Oats were totally safe. Most organic were ok.

A lot of store bought fermented foods are PASTEURIZED after, defeating the purpose somewhat. That might explain the lack of spiking up, also a lot of plants just naturally will bring up the biome without fermentation needed and you already ate pretty well. The salt levels might have imparted the negatives? Interesting experiment N of 1!

Did you justy say "No link to health risk"? How do you know? Are there studies proving this? You cannot say that if you do not have evidence. You say the "dirty dozen" method is flawed. But your assessement that chemical residue has "no link to health risk" is very flawed, given that any harmful man-made chemical should not be consumed at all, no matter how small the amount may be.

So basically no eating at night if you are diabetic. if you eat right before you go to bed and then go to bed, the most sedentary thing you can do, will make your insulin have to do the most work.
