If the temperature is hot enough on the sueface of the pan, you won't have food stick to it. Keep temperature 350-370 to create crisping. I also rinse the potatoes with baking soda and water solution. Breaks down the surface of the potatoes for extra crispy due to pH.

I love to make mine in a big cast iron skillet.....the bottom and sides brown so crispy and my family goes crazy for that!! So good!! Oh, I add bacon to mine, cook it in skillet, crumble into potato mixture before putting it in the oven.
