@@tamil4014 sauerkraut (or sliced cabbage in general) does smell of sulphur especially early on in the fermentation. Once progressed it should mellow out and be more of a pleasant slightly sour smell

@@adrybernal it seems like you had too much flour or yours was extra absorbent. You can try loosening it up with extra liquid and/or oil

I really enjoy your videos and they are very helpful I have a question I took my kombucha out of my first fermenting then I added my fruit and then I put it in the refrigerator by mistake for my second fermenting. My question is if I take it out of the refrigerator can I let it return to room temperature and then will the second fermentation process begin thank you. And also I made sauerkraut from your video waiting for it to ferment

Hi , dont do that , close the lead lose if you close it fully the gas will make it explode , i cover it with a piece of fabric and a rubber band

Great video. I don't use carrots, but the rest of the process works well for me. Why pay hundreds of dollars for "probiotics" from a drug company when you can make all natural great tasting probiotic saurkraut...Also, don't panic if there is a bit of mold on top scrape it off add more brine, and keep going...

No starter needed. It's a spontaneous fermentation with the lactobacilli that are naturally present on cabbage

Good question. Yes non-iodized salt is the recommendation for any fermentation. Iodized table salt causes the vegetables to go slimy and turn dark

I want to try this. I love cauliflower and I love eating Alfredo in large volumes which is usually a very caloric meal with dairy based Alfredo. So this might be a good alternative for me!

After about 3 days, mine are having a bleachy smell. Is that normal?

Hmm that doesn't sound right. Do they taste bleachy too? It could be that some alcohol was produced in the process. Also since this a wild fermentation, there is always the potential of a less desirable bacteria growing. Which technically the high salt content should prevent, but there could be a rogue one. Try to refrigerate for a few days and see if the smell disappears. If it tastes bad, discard.

One week is actually a short time for sauerkraut fermentation. At ideal temperatures (65-72F/18-22C) full fermentation takes 16-21 days. And it's mostly after day 5 that lactic acid is produced which acts as the preservative for sauerkraut. Are you fermenting at a warmer temperature? In that case shorter fermentation time may be needed for the sauerkraut not to get too mushy or slimy. However, shorter fermented sauerkraut may not last as long.

What happens to the brine once you put in the jar? Is there no need to worry about any liquid once it is ready for the fridge?

A lot of the brine gets reabsorbed by the cabbage. I never discard any. It also acts like a dressing. When I pack mine loosely into jars I try to consume it in the next 2-4 weeks. If you want it to last longer, it's best to pack tightly to limit air and oxidation

@Paulamcdaniel, if you're not gonna eat it right away and want to keep it in the fridge for a long time, you have to leave the fermented cabbage in its liquid brine and keep the cabbage leaf topper on top. But, you should take off the weight that was holding down the cabbage during the fermentation process. Then you can just store it in the fridge. It can last up to a year or even more.

I just grew a scoby from ginger store bought raw kombucha . It’s white and floating on top of the liquid. Can I use that liquid as a starter tea? Thank you very much your videos are quite helpful💖😊
