I think you could just add a pinch of salt to your water. This brine recipe is designed to preserve and flavor cucumbers during fermentation. I think drinking it directly may not be delicious or healthy actually.

Hi. I watched your sauerkraut recipe and decided to buy a nice crock with weights like you have. I was just curious if you have to check on it everyday or does the sealed lid keep everything in order. Thanks!

I do recommend checking on it because the fermentation activity can be very powerful at lifting up the weights. Pushing down on them once a day for the first few days will also release some of the CO2 gases, which can affect the sauerkraut flavor if trapped.

I would not ferment it on the shelf for much longer than 5-6 days. It gets very sour quickly. I don’t imagine it being enjoyable after that. In the fridge it can last for up to a year

Sorry it didn't work out as expected. Other than the tips I already give in the video, sometimes the wrong type of cucumber will turn out mushy. Slicing cucumbers can turn too soft too quickly. I recommend using only kirby/pickling cucumbers for fermentation.

You might add more tannin (the grape leaves or horseradish leaves or tannin powder you can get from a local home brew store or online) . A lack of enough tannin can result in mushy cucumbers.

Vinegar can’t be used for lacto fermentation. But you can make refrigerator pickles with it. The recipe is very similar, just use half water and half vinegar. Store in the fridge for at least 24 hours and then your cucumbers will have a distinct pickle flavor already.

After about 3 days, mine are having a bleachy smell. Is that normal?

Hmm that doesn't sound right. Do they taste bleachy too? It could be that some alcohol was produced in the process. Also since this a wild fermentation, there is always the potential of a less desirable bacteria growing. Which technically the high salt content should prevent, but there could be a rogue one. Try to refrigerate for a few days and see if the smell disappears. If it tastes bad, discard.

I haven't heard of that idea but if mulberry leaves are high in tannins then they would be great too. We actually just got a mulberry tree last year, so I'll have to try it next pickling season

We don’t live in an apple growing area so cider isn’t easy to come by. But I make apple scrap vinegar all the time. Would you be interested in a video about that? I could also look into making my own cider in the Vitamix for a cider vinegar video
