I imagine you might want to mark small areas at a time. Moving the quilt will disturb or erase the markings.

Is there a reason not to do the triangles by sewing the perimeter of the 5 inch squares then cutting diagonally twice to get 4 HST?

Yes you did. White chalk will not show on white background of front, thus mark and quilt from the back.
