It's a pity that one has to read the instructions instead of listening. Beef or weal shanks with marrow bone work beautifully for this dish. It is good to make an extra volume of sauce, though.

I wonder about 2 things. Why tomato paste? And why add the peppercorn so so late? I’m planning to make my first this weekend and looked up a couple recipes. Most stated this is older than tomatoes where known and the peppercorns need to be cooked to death to neutralize the heat.

I used shin meat when I made peposo, which was lovely and rich. I would recommend seasoning the meat with salt before frying off beef to help bring out the flavours.

the ideal temperature for leavening is around 20 degrees Celsius. If the room is colder, cover the dough with a couple of cloths and let it rise longer. If it's warmer, however, it can be a good idea to do part of the rising in the fridge. for example, if it's hot in the house, around 30 degrees celsius, I leave the dough in the fridge for 3/4 hours and then the remaining time at room temperature.

Italians love those machines, they’re excellent for pizza but a little small. They even have a “modding” scene where guys switch out element so they can make Neapolitan style pizza.

Looks super delicious! Sorry if this is a dumb question, but at the part where you're mashing the beans, what is that tool called? I've never seen one of those and I think I'd like that more than the food processor I use for this sort of thing.

Thanks ^_^ It's a vegetable mill. here in italy is often used to make tomato sauce avoiding that the skins of tomatoes are part of the sauce. In this case it's to prevent the bean skins, in case they're a little tough, from getting into the soup. With the vegetable mill in practice you get only the puree of what you are preparing. The problem of these recipes is that the 'poorer' cuts of beef are often hard to find in most chain grocery stores. Beef short-rib is often used as a substitute, however, it is very, VERY fatty. Some recipes have you 'mash' the garlic and tomato paste together, and rub the meat with it to give the pepper something to 'adhere-to' when seasoning the meat - I've tried this, it works reasonably well. Some rosemary leaves in the wine is also nice.
