Have you ever done a starter without discarding but using less each day? I just started my 1st gf starter 2 days ago. I did 4 tbsp of 1:1 gf flour/ 2 tbsp of water and each day I have added 1 tbsp of gf flour to 1/2 tbsp water, so far it’s going well. I really don’t see the need to discard. You could just start out with a gallon size jar filled 1/3 of the way with a 2:1 mix and just stir it daily twice a day. What are you doing with your discard? You are throwing away almost an entire batch of bread flour by weight by the end.

Ummm, i recently had to go gluten free, it's not easy. After 60 years its hard to give up the things i enjoy to eat, but for my health I will. My wife loves Strawberry rhubarb pie, so tomorrow, i am going to attempt your recipe, I'm not a cook but will follow your every move. Fingers crossed.

Hi Jilly, I'm happy to have watxh your video on vanilla wafer. Actually, I've made vanilla wafer with gluten free flour. And it didn't went well. I just replace all purpose flour with gluten free flour. I just learned of celiac desease whennI met my husband a year ago (March 2023) and I'm trying to learn baking and cooking for him but I know it was no good. Sometimes my bread, I can't make it whole and when you bite it, it's falling apart. What is the best gluten free you can suggest? I tried Robinhood, it's good but the other one which he bought which is a lot cheaper, it has a different taste. Thank you so much!

I am NOT a cook. The best meal that I could make was a reservation. But since my wife’s stroke left her with right side hemiplegia, I have been striving to learn to cook. Then my wife fell and broke her right hip, whereupon it was discovered that she had terminal abdominal cancer, and she is now palliative. I was literally thrown into the kitchen, in the deep-end, as it were. If something came out of a box, or a can (or from a very kind neighbour or a friend from church), I could manage (sort of). I wanted (needed), to try my hand at waffles, since they were a favourite for my wife. I thought I would try to Google it and found your recipe. It took me a lot of effort to sort things out but I finally analysed what I needed to do. Guess what? It worked. Thank you. I will continue to work on this and check out your other recipes. I am going to try to buy your book. Thank you again.

I was about to completely throw in the towel on GF. It, none of it that I tried, is any good. I’d rather almost go without baked stuff as eat the GF. Now having seen this channel I may bite the bullet & try again. What I wanna know tho is, how do you know how many eggs to use in a recipe, also, salt & leavening agent? I mean with a recipe I guess the instructions for salt & leavening would be on there, but what about the eggs? Just eyeball it, or check the consistency?? You did a great job & I adore the crazily huge bowl, dang it looked as big as your body, LOLOL. Wish I had one, surely would come in handy for different things.

I jumped right in with my GF starter! Brown Rice flour on order so I used my measure for measure! Works beautifully using your half cup method twice daily!!! On day 5 and it is tripling and smells like dough!!! Lots of bubbles. Im going to continue to day 8 though. Thanks for making this so easy!!!!
