What a wonderful idea to include Sweet Potato in a Black Bean Salad. Harriet loves Sweet Potato. Another great week night meal recipe. We will make this tonight. By the way, The Rhubarb Pineapple Jam we made yesterday. We will share a couple jars with our niece and nephews this weekend. We will enjoy it tonight. Hope you are doing ok. This is easily one of your best recipes. I've just made some vegetarian black bean sausage rolls and used mashed black beans and mashed red kidney beans as a substitute for the meat. So I know your flavours will be perfect , green leafy veg, red capsicum and corn - add that ranch dressing to all this and you've smashed it out of the park. This is definitely going to be one of my weekend snacks. Thanks for sharing Jilly.
